Today's recipe is aubergine chicken quick fry. It's a very easy recipe that can be a set menu every week, you can cook more then put them into a food box, it can last for about 2-3 days.
The ingredients needed are simply as below:
1. 1 Aubergine - cut as the same size as chicken breast
2. 1/3 Leek
3. Some ginger - cut into tiny squares
4. 1 Chicken breast - cut into squares
First fry ginger with some vegetable oil (or you can use olive oil, sunflower oil etc, you can even use butter, it will add some creamy flavour into the dish). Once can smell the strong flavour of the ginger, then add chicken breast, fry it until the colour starts turning white. Add prepared aubergine and leek, with some salt, sugar, light soy sauce. Then keep frying couple minutes, until all the material mixed together. Add a bowl of water, then cover it with a lid. Let it steam for about 5-8 minutes (this depends on the amount of your food).
Done! I added my favourite chilli powder with some white sesame. This aubergine chicken breast quick fry recipe is perfect to eat with rice. :D
